Simple Recipes: Double Chocolate Zucchini Brownies

Zucchini and dessert sounds like a crazy combination, but trust us when we say it’s a pretty life-changing one. Bored of tossing zucchini in your salads and stir-fries, or simply looking for a way to sneak extra nutrition in your cheat day treats? Try these scrumptious, mouth-watering Double Chocolate Zucchini Brownies. We promise, it’s every chocolate lover and health junkie’s dream. If you’ve never baked with zucchini before, here are some helpful tips to ensure a delicious finished product!

Mind the moisture content. This particular recipe calls for zucchini as the main source of moisture, so make sure not to press the zucchini shreds too hard! Try using a smaller zucchini as well, since they pack much more moisture than the larger varieties. 

Dry batter? Don’t panic. The batter will be extremely dry until you add the zucchini. Simply prepare the batter following the recipe instructions, add the zucchini, and stir calmly. 


  1. 1/2 cup (112g) vegetable oil

  2. 1 1/2 cups (300g) granulated sugar

  3. 1 tbsp. vanilla extract

  4. 2 cups (256g) all-purpose flour

  5. 1/2 cup (64g) unsweetened cocoa powder

  6. 1 1/2 tsp. baking soda

  7. 1 tsp. salt

  8. 3 cups finely shredded zucchini DO NOT DRAIN

  9. 1 1/4 cups semi-sweet chocolate chunks


  1. Preheat the oven to 350°F and prepare a 9x13 pan with butter (or use baking spray) and line with parchment paper. (Allow parchment paper to go up the sides for easy removal.)

  2. In a large bowl combine oil, sugar, and vanilla until fully incorporated.

  3. Add flour, cocoa, baking soda, and salt. Mix until combined. Batter will be very dry.

  4. Fold in zucchini by hand. Allow batter to rest for 5 minutes.

  5. Add in chocolate chunks and stir again. Batter should appear more wet. (if not, let it rest for 5 more minutes and stir again)

  6. Spread brownie mixture into the pan and bake for 25-35 minutes.
